'Paella Valenciana' — £14

The Original Valencian Paella

Whole chicken thighs, and chicken thigh fillets, cooked in a rosemary infused saffron rice stock with judías verde (green beans) and garrofón (butter beans), and garnished with lemon wedges. This is a farmer's rustic paella; consequently it's not the prettiest looking, but it tastes fantastic, and has satisfied the Valencians for over a century. Traditionally made with chicken and rabbit, which adds another dimension to the flavour. Rabbit can be added for an additional £2 p/p. Subject to availability. (Rabbit may contain shot.)

'Arroz Verdura' — £14

Vegetarian Paella

A selection of seasonal vegetables, with roasted red peppers, cooked in a rosemary infused saffron rice vegetable stock, garnished with lemon wedges and asparagus. We do our best to use locally sourced seasonal vegetables. Of course, in the bleak mid-winter that might not amount to much. That being the case we shall endeavour to use vegetables that have only clocked up road-miles.

'Arroz Marisco' — £16

Seafood Paella

Fresh Cornish fish (pollock, haddock or hake), squid, prawns, and wild Cornish mussels, cooked in a saffron rice stock, with roasted red peppers, and garnished with peas, gamba (large head and shell on prawns) and wedges of lemon. Traditionally in Valencia the star of Arroz Marisco is langoustine. These are occasionally available in Cornwall (they're Scottish). Langoustines can be added. Subject to availability and market price.

'Arroz Mixta' — £17

Mixed Paella

Chicken thigh fillets, fresh Cornish fish, squid, prawns, and wild Cornish mussels, cooked in a saffron rice stock, with roasted red peppers, and garnished with peas, gamba (large head and shell on prawns) and wedges of lemon. I call this the 'tourist paella.' It appears on the tables of Mediterranean restaurants frequented by tourists. Valencians ask, "Why would you want to mix meat with seafood?" But if you're enjoying a Mediterranean day in Cornwall, and this paella reminds you of holidays past, then here it is.

'Arroz de las Montañas' — £16

Paella from the Mountains

Pork rib and cuts of lamb, cooked in a rosemary infused saffron rice stock, with judías verde (green beans), garrofón (butter beans), and mushrooms, garnished with lemon wedges. This paella sits at the other end of the spectrum from the Vegetarian Paella. This is a hearty feast of meat, as you might expect in the mountains.
