Over the years I have eaten a lot of paella; not all have been equal. Paella is quite a technical dish to prepare and cook correctly; it is also a dish with many shortcuts and substitute ingredients. I wanted to replicate those paellas I enjoyed most—cooked traditionally, with the best ingredients, and have been cooking paellas now for 15 years.
Recently inspired to pay homage to Valencia (birthplace of the paella), and its culinary heritage. Naturaly this includes Valencia's signature dish, 'Paella Valenciana', along with several of its other acclaimed rice dishes.
I now live in Falmouth, Cornwall, surrounded by sea and fresh fish. With such an abundance of sustainably sourced seafood, along with other arable produce, it's a no-brainer when it comes to creating great paellas.
Unfortunately this ambition has coincided with the COVID-19 pandemic, and for many of us carefree outings to mingle wine and dine are on hold.
The good news though is that with a select group of family or friends you can still enjoy a great paella in the comfort and safety of your own home; just warm your plates, open the wine, and your paella will arrive, freshly prepared, freshly cooked, and delivered in the pan to your door in and around Falmouth.
And more good news: No washing up. When you've finished just put the dirty pan in the linen sack provided and we’ll pick it up the following day.
